Carrot Slaw
Gluten Free, Raw
Serves 8
1 carrots, peeled, shredded
1/2 cup pineapple, finely chopped
1 T. raisins
1/4 cup mayo* (Vegennaise--not raw)

Mix all ingredients.  Chill for 2 hours before serving.

*Raw mayo: 1 avocado, mashed; 2 t. lemon juice; 1 T. raw agave; 1 t. vinegar; 1 t. tamari.  Mix.  Store in air-tight container in the refrigerator, one day.
1 apple, cored & chunked
1/3 cup of raisins
1/3 cup celery, chopped
1/4 cup raw mayo* or Vegennaise
2 lettuce leaves

Mix all ingredients except lettuce leaves. Place lettuce leaves on a dish. Scoop the apple mixture onto the lettuce leaves. Serve immediately.

Greek Salads can include these ingredients:

tomatoes, lettuce, spinach, artichoke, olives, cucumbers, hulled sunflower seeds, onions, garlic, radishes, broccoli, cauliflower, chick peas, zucchini, peppers, or any other vegetables you might like.

Greek Salad ingredients do not need to include cook foods or cheese.  For the appearance of goat cheese, mash some tofu. 

The dressing 1/4 c. water, juice of a lemon wedge, 2 T. cashew or almond butter, 1/8 t. garlic powder, and salt & pepper.

Easy  French Fries
Gluten Free
Serves 1
1 potato
optional seasonings: onion powder, garlic powder, chili powder, pepper, salt

Preheat oven to 400 degrees F.  Scrub and remove eyes from the potato.  Slice into French fried-sized pieces.  Place on an oil sprayed or non-oil sprayed cookie sheet.  Sprinkle with desired seasonings.  Bake for 15 minutes.
  NOTE: Garlic powder, chili powder, and pepper can be spicy, so use them sparingly.

Green Beans and Rice
Gluten Free
Serves 1
This is a great side with Baked Eggplant or Spaghetti Squash or sandwiches.  It doesn't sound like much of a side, but it tastes delicious!
Fresh, organic green beans, ends cut off
1/4 cup rice, dry
1/4-1/2 vegan bouillon cube
NOTE: To make a sweeter side dish add some frozen corn to the cooking rice.

Cook the rice according to package directions. When nearly cooked, wash the beans and place in a steamer basket to steam until just tender.  Mix and enjoy.
